Very similar to the recipe I got over 40 years ago from a friend in Aberdeen, but she never used vanilla.
Ingredients and Recipe from his website:
Ingredients:
8 oz flour
4 Oz cornstarch
4 oz powdered sugar
8 oz unsalted butter
Vanilla bean paste
Recipe:
Preheat the oven to 350 degrees f. Sieve the flour, cornstarch and sugar into a large bowl. Cut the butter into small pieces and rub into the dry mix until it forms into a ball. Roll out to ½ inch thick and cut into desired shapes. Place onto a sheet of parchment paper on a baking sheet and prick the top of the shortbread all over with a fork. Cook for about 10 minutes until lightly brown around the edges.
Both my Grandmothers 1907 and 1910 said if you mix any way but hand it’s not shortbread. These ladies know what they are talking about.

Came for shortbread recipe not waffle.
Looked at many recipes before picking this one. I reasoned that you’re the Queen’s man so yours must be good to serve the royals. You also used a wooden mold which I have. I followed the directions exactly. I found the mix too dry to form a ball that held its shape. The bottom and sides of the molded biscuit were quite brown (by shortbread standards) in a 200C(350F) oven and had to be pulled about 10 min early. And finally, have to say the flavour was bland – not buttery by any stretch. Sorry but quite disappointed.

English people would’ve known about thistles. My Grampa was a Scotsman. It was the Vikings who snuck in to attack the Scots, totally unaware of thistles. Their shouts of pain woke the Scots, and they triumphed over the Vikings.
I have a shortbread pan, also with a thistle print. A true Scot would NOT drink Earl Gray tea with shortbread, lol.
My Grampa sometimes used a bit of rice flour, not cornstarch.

I’ve been making shortbread for christmas for years now and the idea of using corn starch is brilliant. I will have to give this recipe a go when I make them next.

I’m confused by the measurements at the beginning of the video where the directions are overlayed in the video??? They are in-correct. It says that 4 oz, is 1 cup. That’s is wrong. 8 oz is 1 cup. 4 oz is 1/2 cup. So do I use 1 or 2 cups of flour? Do I use 1/2 cup or 1 cup of sugar? Do I use 1/2 cup of 1 cup of cornstarch? Since all the ounces are wrong that are converted to cups, it’s impossible to tell what amounts are supposed to be used, Does anyone know? Instinct would tell me 2 cups of flour, 1 cup of sugar, 2 sticks of butter, Cornstarch amount I have no idea. Anyone know??? 🤷♀️🤔
I made this Friday, doubled recipe n used cornstarch n powdered sugar. Rolled it out flat on a sheet pan n docked it with a pizza roller docker, cut into 1-1/2"x3 inch strips while still warm. I did have to add an extra cube of butter. It melts in your mouth. YUMMY shortbread. Thank you Darren.

I have literally made this recipe once a week for over a year. Love this recipe and it is easily modified for other flavors, like chocolate nut and cinnamon raisin.
