I’m a chef for 45 years. I wouldn’t buy any of these. Victronix is the best and reasonably priced. I’m surprised they weren’t included. America’s Test Kitchen and NY Times both have them as top picks.

Oh boy, we purchased the Wizeka brand after your review and Wow! These knives are very sharp, it is so nice to have sharp knives in the kitchen again. Definitely worth the money. The only con to this knife set is the steak knives need less serration to slice through the meat. That thing is like a wood saw.😂
Don’t buy knives sets. Always buy knives individually.

**project review idea** This is an awesome review of knife sets! However, can you conduct a review of only steak knife sets? We need more than the 6 that comes with the set for guests. Some steak knives have longer serrated points (BRODARK serrated shark series), some have small serrated points (Wizeka knife set reviewed here) some are half serrated (HENCKELS Statement series) and does that really make a difference using for steak, some have no serrated blades (Messermeister Avanta), and some have no serrated Damascus blades (SYOKAMI Amazon choice) which is supposed to keep cutting when it gets dull due to the the layers becoming microscopically serrated but how bad do they rust (as you noted here). Serrated blades cannot be easily sharpened but tend to cut steak better than non-serrated, and for a half serrated blade would you really use the part that is not serrated. Which blade type works the best for steak, do serrated blades hold up without being sharpened ever, and which blades are most rust resistant (that’s the biggest complaint about Wizeka on Amazon reviews is they tend to rust, as you also noted). Always love your channel and check before I make important purchases.

My Henkel knives have been some of the best knives I have owned. With the exception of some very high end knives from Japan. They hold their edges very well and are excellent for daily use. I hand sharpen them at 13 degrees when they finally need it which is not often.
Outside of the knives tested here there is one particular knife from a Miracle Blade set that I purchased years ago which is my most used knife. It is the "Rock N Chef Knife". It is not made the best of steel but the overall performance of it is just incredible. I finally wore it out past the hardened edge and it would not stay sharp like when new. I was able to get a replacement knife at no charge in only a few days. Their lifetime warranty is 100% with no return required. I just wanted to share that with everyone as a unique point of interest.
Any line of the Shun family will outperform all of these knives, (hand washed and regularly sharpened) will make them last a lifetime
Couple notes
First, in real world use, edge geometry matters more than sharpness, especially thickness behind the edge. Sharpness is important for breaking through the "skin" of ingredients but doesn’t matter as much as thickness behind the edge for going through the rest. So some measurements of the thickness from spine to edge would be usefull if you decide to do another one of these.
Second, lightness is not necessarily a bad thing or always an indication of low quality, though it definitely is for the ones shown here. A lighter knife is easier to control, which is why a lot of high end knives are surprisingly light.
Lastly, the tip drop durability test is directly indicitive of the softness of the metal. The ones that bent instead of chipping use soft steel, which is why you’ll notice they are also the ones that dulled the fastest. Avoid those and just be careful with your knives.
Also for people looking for a set, don’t. Get one good chef’s knife or santoku, a paring, and a bread knife. If you cook a lot of veggies, a nakiri or chinese cleaver would be my fourth pick. Most knife sets contain a bunch of knives you’ll never use and you will get more for your money if you pick and choose good knives that will actually see use.
I love and trust your reviews, but I was a little disappointed in this one. I just purchased same Wizeka set. The first day one of the steak knives was accidently left in water for only a few hours and rusted terribly. I think you need to lower the corrosive resistance score. I saw reviews on Amazon echoing my findings

That’s a good piece of information to know, that the Farberware knives are not supposed to be sharpened. since it didn’t say anything about that on the packaging.

In regards to blade quality, it’s all about the hardness of the steel. The harder the steel, the harder is to sharpen, but once you get it sharpened, it’s not going to wear down as quickly. So all these comparisons can be avoided by just picking the knife with the best steel hardness. If they don’t include that statistic, call the manufacturer.

I’m surprised that Shun by KAI wasn’t on your list, they are expensive, scary sharp but fragile. I’ve been running a knife sharpening business for 18 years. I see a lot of good knives damaged because the users handle them roughly. A cooking class can show people how to properly use differs types of knives. Also the main thing is , you get what you pay usually. German knives seem to hold up better in unskilled hands.
